Yup, no sandwich filling can be considered anything other than feeble if it lacks beetroot. However, the correct combination is homemade wholemeal bread, homemade hummus, lumps of feta cheese, and slices of baked, homegrown beetroot. However that particular sandwich needs it out of a jar, sliced and preferably crinkle cut.My personal favourite is wholemeal sub, toasted on the inside, left to cool then filled with sweetcorn relish, pastrami and sliced sweet and sour gherkins. Spread thickly on thick white bread. Not to everyone's taste presumably so they discontinued it. But you can still buy the ingredients! Or anyone remember O'Briens uses to do a "sandwich sandwich"? Or maybe it was 'just' a triple-decker.
