Help needed! Seasoned travelers might be able to help me out?

I am trying to find a flight home on Monday 5th June from around the Nuremberg area of Germany.

I don't want to take the death flight from Munich even though it's inexpensive and easy to get to by train from Nuremberg as I've been there done it and hated it hanging around (a tad hungover) til silly o'clock.

Any ideas of how to get home to Berwick on Tweed  at a decent hour and not leaving my hotel in Erlangen at silly o'clock on the Monday morning?

So far best options appears Ryanair Nuremberg to Manchester and train home however if the flight is late then an open one way ticket is not cheap. Any way around this should it happen as the train tickets from Manchester Airport home will be around £20-£25 I would imagine.

Take a 2 hr train journey from Nuremberg to Frankfurt and jump on the 11:00 Lufthansa flight to Edinburgh. Take a tram to Waverley and another train to Berwick. You will be home for 5 pm
